A play off of the classic BLT I often make for my daughter, Annika. The name can stand for either, Tempeh, Lettuce and Tomato Sandwich or what Franco Lanzi, photographer for Tempeh Girls likes to call, Tender Loving Care Sandwich – you pick!
Bread of choice – I really like hemp bread or bagels – in the refrigerated section of Whole Foods
1 pkg Tempeh Bacon
1 tbsp olive oil
sliced tomatoes – in the summer the heirloom tomatoes taste amazing on this
1. Heat oil in a sauté pan and sauté tempeh until brown on each side – remove and place on paper towel to absorb the oil
2. Assemble sandwich – I put veganaise on one side and mash the avocado on the other
