A play off of the classic BLT I often make for my daughter, Annika. The name can stand for either “Tempeh, Lettuce and Tomato Sandwich.”
• 1 pkg Tempeh Bacon
• 1 T Olive oil
• sliced tomatoes – in the summer the heirloom tomatoes
taste amazing on this
• Bread of choice – I really like hemp bread or bagels in the refrigerated section of
Heat oil in a sauté pan and sauté tempeh until brown on each side – remove and place on paper towel to absorb the oil.
Assemble sandwich – I put veganaise on one side and mash the avocado on the other.
